Where do I spend the gold I get?

I'm new in the game and I can't find a place to spend the money

Go to the map and check some of the spots that detour from the main path, there are several stores where you can buy potions, weapons and pets, the first store that becomes available is the Thieves' store

The Castle Keep is the first available store.
