Gems and enchanting

I am on 3* quests, soon to be 4* when I complete the mission to get a guild rank. I noticed that gems sometimes show up at the store. My question is, once you have gems in a socket can you remove them without breaking the item and/or gem? Are there higher level gems later?

You cannot remove gems once socketed. You can overwrite which ones are in there, but the previous gem is destroyed.

Yes, there are some epic tier gems.

My next story mission is the Bandit King and I never got gems, dropped or at the store. Did I got that unlucky or they mostly drop later?

The harder the mission, the more they drop. They start dropping at 4* IIRC, but only in caves at that level (and later mostly in caves and far less in other environments).
