From the gameplay I've seen, continuing to run straight seems to avoid the webs.
If you get caught in a web, it ends Fang 2's sequence of his web attack. You can mash out of the web, but hopefully the instant death missiles don't kill you before you mash out.
If the triangle is pointing upwards (not targeting you), then stand still. Wait for the webs to fully finish then double jump between two of them and out of it.
If the triangle points down (aka, one corner is targeting you specifically) you can either
A) Keep running and out run it (this imo is riskier)
B) Jump at the last second before they fire, then just move diagonal between two webs on your way down. (I find this one easier, for reasons explained in a second)
When he fires multiple triangles of web at you, its just a matter of dodging one then staying somewhat close to it to dodge the next. When he starts shooting the big corks, just keep running right and you'll outrun them. Positioned well enough, you won't have the risk of running into one of the web traps upon making a loop around the course.
Once he starts rocket shooting(right after the web shots) you should walk slowly, no jumping, no running, just normally jog away out of the rockets as slow as possible. Note that sometimes you may need to go in the opposite direction, but if you're jogging and not running it should be an easy feat as well.
