Some levels are subtle influences, like they will just spawn more Orcs or a wave of "naked" Orcs will instead have shields. Others will add a tougher enemy type (Chasm on War Mage difficulty has an Ogre in co-op but none in Single) or more of a particular enemy (Finale Nightmare solo has 2 Shamans with each Ogre on the final wave, co-op has 3 Shamans).
I haven't done hard testing yet, but I don't think enemies have more health in co-op compared to solo. Just more of them.
