As for what you do once you have one... well... you probably will get very bored chasing inferior foes and trying to shoot tiny little fighters with great big guns that MAY hit one if you are lucky.
I suggest you limit your cheat ship to an M6 or M7 so you can enjoy a fight or two ;)
There are few "special" ships that you can't buy - but you can capture them, by training marines and performing boarding operations.
You'll need very good reputation with race if you want to buy capital ships from them.
The biggest capital ships are called "destroyers" in the game - M2 classification. M1 are carriers - less guns, more docks for fighters.
M7 are frigates - smaller ships that serves are support for those big M2 and M1 classes.
They usually cost about 50-200 million credits, depending on the model.
The best ships are in the M2+ class - Boron Megalodon, Terran Kyoto, ATF Valhalla (can't buy, only capture) and that new split ship, forgot the name.

Press Shift-C (your ship command console) and then select command for every turret ("Attack enemies" is usually the best)
The Katana is a good general purpose ship in that it has reasonable storage, sheilds and weapons. I fly one from my Aran.... sweep up a load of missiles, save a few Astronauts, claim a few ships then protect them as they limp to the Aran. Then I take the Aran to a Shipyard and sell the claiomed ships.
But all capital ships get boring fast. They are slow and utterly bad against fighters unless you have escorts or missles. If you start using missles game gets even more boring because they are the IWIN button.
In ap 3.0 there are very few ships you can't get w/o bording. And most of them are horrible for fighting with exception being m6s. Valhalla is so slow you would need half an hour on x10 sata to get past 1 sector and then you realize its so huge it can't fit through a gate. Aran isn't combat ship to begin with. Everything else is buyable now except for stuff that isn't in vanilla game.
or depending on the lasers you have mounted you can set some to attack fighters or capital ships (although you need the fight MK2 software upgrade to use those commands)
