alternatively(and what I like doing while also doing floatplanes) is to immediately ready a strike at that start of a battle so that they're on deck and ready to fly when recon finds the enemy fleet.
as far as them taking off before you 'execute/auto strike' I would need to know what buttons you are pushing because I've never encountered such an issue before.

you don't, you can of course change the target before launching any strikes, it doesn't affect already launched strikes.
oh and if you don't want to do recon at all then if you click the recon button at the top of the battle screen there is an option for 'no recon' that you can click. I really recommend that you do use recon though, especially when you start getting carrier battles it becomes vital since the enemy fleet can be extremely far away.
If your planes are readying and then immediately spotting and taking off on a strike, it is possibly because you have used the "Launch strike" button while the planes were still in the hangar in an "Unready" state. Clicking this button at this point will cause the strike to go through the entire ready/spot/launch cycle without further intervention by you (* an exception is mentioned below).
On the other hand, if you use the "Ready strike" button while your planes are "Unready", the game will ready (fuel and arm) the planes in the hangar. This process than can take up to 30 minutes depending on the size of the strike and the experience of squadron and carrier crews. In this case, the planes will not be spotted on the flight deck and will remain in the hangar in a readied state until you order a strike by pressing the "Launch strike" button. After the "Launch strike" button is clicked the game will begin moving the selected readied planes from the hangar to the flight deck (spotting them). This process can also take 20 to 30 minutes. After every plane in the strike is spotted on deck the strike is ready to take off. Rarely, the takeoff may be delayed if other flight activities are taking place. At this point the carrier is in its most vulnerable state with an armed and fueled strike on deck. The actual launching of the strike can take several minutes; the time required can vary depending on the experience of the squadron and carrier crews. In other words, the "Launch strike" button will function quite differently depending on what state the selected aircraft are in when you click it.
You can tell which preparation path the squadron is taking by the notation assigned to the squadron on the "Set up strike" screen. If the notation reads "Readying/Ready" your planes will stop the process after they are all readied and will remain in the hangar. If the notation reads "Readying/Flying" then the squadron has been ordered onto a strike and will ready/spot/launch without your further intervention.
You can track this process as it occurs by opening the "Air formations" screen.
* If you have the checkbox "Confirm target location when spotted" checked, and you have used the "Launch strike" button to order a strike while the aircraft are unready, the game will pause after the strike is fully ready and before the planes are spotted. The game will then allow you to adjust the target location of the strike.
