removing socketed items?

Yes, it is possible to remove a gem from a socket, although you will either lose the item or the gem in the process. Keep playing through the first act, and at one point 2 goblins, one that destroys gems, and one that destroys items, will move into the estherian enclave. They will remove gems for you. And yes, there is in-game chat that is consistent across all games, even ones that you are not playing. It is called steam chat. In game, press LShift+Tab to open the steam overlay, open up chat with steam freinds, and chat from there.

It appears that there's no Lobby chat, no.
As for sockets, during one of the mission in act 1, you'll rescue an NPC that'll be able to remove gems from sockets(The gems are destroyed though).

As you progress through act 1 two goblin npc's will appear in the enclave who specialize in ember. One will remove gems from items (the gem will be destroyed) and the other will recover gems from items (the item containing the gem will be destroyed).

You hit the Enter key to initiate chat but it only works if you're in an online game.
