Hardcore Elite
I want to get the "Unstoppable" achievement. I wanted to know what the best/easiest solo class / build is for Hardcore Elite.

out of experience and guides, frostmages are amazing at CC and AoE, with good DPS and somewhat lacking health (which is made up for with their abilities), while engineers are outstanding at tanking if you know how to use them, while somewhat lacking in DPS if made overly tanky.
pick one, the other two classes are meh, they arent really bad, but they lack the required abilities to excel in hardcore elite, especially the berserker.

I have a level 5 frost mage now and I can't kill anything. I'm on hardcore elite. I run out of mana before I can kill a pack of mobs.

then try an engineer, might work better for you.

ive been looking into this for awhile and it seems that the engineer is the easiest way

Easiest is probably a summoner engineer or a summon-cannoneer, though plenty of engineer builds work. Glaive outlander used to be the fastest for clearing HCE, but glaives were nerfed a long time ago.

As for embermage, they are decent for HCE. You have to be at level 30+ to see frostmage work wonders. Before then, you don't have very strong ice spells at your disposal. Prismatic mages have a strong easy to use spell off the bat, but almost no crowd control which may get you killed. Flambermages are sort of in the middle, good aoes but doesn't completely stop enemies.

Looks like you are going summoner. Fire and spark doesn't help with your damage output if that's the case. You can use the extra points to up your minions and passives. The rest of your build is fine, though I have my own 2 cents:
-I personally like onslaught better than storm burst for an escape skill due to the CD (even the slowest enemy windups take a second or less). It also unlocks later, meaning you are more vulnerable during those levels.
-Forcefield is usually preferred over aegis of fate for a number of reasons. It doesn't require you to be hit first AND roll the chance to proc, and it will absorb a lot more damage at around rank 10. Edit: Forcefield also helps your minions.

I did mine with a frost mage :) Pretty easy when you have lots of CC

Should I put all my points into Vitality for a summoner spec engineer?

check a few guides and especially some videos, most I have seen put little to no points into vitality. you main stat is strength, while you can use dexterity for dodge and crit chance and focus for extra mana (though that can be done better with mana gems)

Actually, if he's running a pure summoner, minions don't benefit from strength and they don't crit. Pure summoner has enough dex for dodge, and the rest vit (since there's no reason to put it elsewhere, not that it makes significant difference). All other engineer builds do limit vit for blocking only though.
