That might be a bit difficult, if the Steam versions aren't compatible. AFAIK Steam launched with v1.1.2.0 of Half-Life (and thus TFC as well), but it's now at v1.1.2.2. Are you sure the demos you're trying aren't for the WON version of TFC?

Set Steam account to "common", browse for the hl.exe and add -game tfc to the lauch parameters. Do *NOT* use HLAE, as this may trigger a VAC ban.
Navigate to the folder with the demos, ignore the warnings which may pop up. Select a demo, press "Play" and it should launch TFC and start the demo.
The engine version isn't displayed correctly, but the build number should be. Not sure about the protocol.
