How many players per server
how many players does a server hold?

A server (which we call a shard) holds around 7k people. There's more info on that in our tech FAQ: https://playpaxdei.com/en-us/faq/tech

Shard is a region. Every shard contains 2 or 1 world. Every world contains 4 provinces. Every province contains at least 6 valleys (I assume more). There is at least one server per valley. So basically it's 7000 / 2 / 4 / 6 = ~145 players. It's maximum. Effectively I think it's twice lower.
P.S.: Oh, and I forgot about different zone instances for each valley
