Just set your stuff to "private" and nothing can be stolen. And as for the sparse resources - well, that's entirely the fault of those greedy people who thought they'd secure "their" resource spot by building almost directly on it. Fun fact: resources don't respawn on plots. Which accounts for the scarcity of clay that you mentioned. Devs fixed that pretty quick by adding more clay spawns in more areas. I had no trouble finding clay after that.
So my advice: the game is not for you - look somewhere else stop trolling - thank you.

Guess who's opinion is more useful for that thing, especially when it is a not finished developed thing. But it can still be useful "less" didn't mean "nothing", but when developers hear at every player who have the smallest interest in their game, you quickly have 100 opinions on one topic and 90% didn't match the vision of your game at all. So you hear more to people who love your vision. Or at least you should, if not a publisher is money more important than a good game.
Clay was by the way a typical problem a Alpha could have, it was only on the edge of water and guess where people mainly build their plots. At the water and when you place a plot their resources didn't respawn in a are much bigger as your plot space. They fixed that by let clay spawn also from water away. So maybe that was the problem for your friend.
I had myself no problem with clay at all. There was a free space where it had spawned and where players leave an empty space for that. Other player not, one placed a spot right in an area where 4 boars spawned. But I don't blame them, the most new players didn't know that mechanic or build there in between spawning, so as the placed the plot they didn't saw animals.
And about grind... Grind is often player made, because instead of just playing, they decide to want to progress quickly and that often cause often an annoying grind feeling. A feeling that people who play in a relaxed way don't know, they even grind and have fun on grinding because of the different mindset.
This game is great, and I can't wait to see what they do with it.
Combat/Endgame/AI/Market all needs work, but that's what early access is for. Hopefully they can pull it off in a year or three.
Also, man couldn't find clay for an entire day? That's hilarious.
Your stuff can't be stolen unless you set your boxes to public. You can't access other peoples crafting benches either.
And just go to water and you'll find clay. If your friend spent an entire day and couldn't fine clay, that's a problem with them sorry to say.
