Another interesting choice is the Almoravids. It's a slow start but with only a few neighbours you can expand. The early focus is on food production. There will be some revolts in conquered regions due to religious differences (heretics) but it's a good chance to learn how to deal with this issue and not quite as extreme as the issues Castilla has to deal with.
