The list goes on. I'm surprised the screenshots didn't provide hints about the differences, especially if you played Empires. Were you playing Devil's Advocate to see the reaction?
I suggest just taking a glance at the manuals for both games, they are both freely available on steam. Reading the key concepts should be enough to tell you how different they are. They are both very detailed games so based on the details I suppose that their gameplay will be, despite the similarities, different enough.
As for your question whether you should get empires or wait for this: Since Kingdoms is coming out in a few days, I'd get this one first. Though I recommend getting Empires as well, it's a great game.
I want to know that there is a difference when I'm playing it. That I'm not just playing, just to play.

Yes, you can reproduce the 1204 crusade. You can have the Crusaders, the faction (whereas any Catholic can be a crusader too), join forces with Venice and then sack Constantinople.
The Papacy likes Christian nations with high piety ratings. Not taking care of your piety in your regions will mean degraded relationships over time and possible excommunication. Orthodox Christians enjoy a rise in relationships between themselves over time. There is no degradation of relationships over time between Catholics and Orthodox Christians, but it will happen between Christians and Muslims unless you have an ongoing treaty with them, which will create "lines of fractures" over time.
