By the way it doesn't sound weird at all, last year I bought Tiger Woods PGA Tour 2005 for PC because I had it for my PS2, and come to find out the PC version is nothing like the PS2 version, in fact the PS2 version has more character and gear customization, better controls, and an overall better UI and overall experience.
Had I been playing since say last year I would be able to jump back in and most everything would look/feel the same, it's the same idea as when you forget what someones face looks like after a long time of not seeing them, but once you see them again and you think about them enough you get their facial apperarance impressed in your memory again.
As for maps changing and UI changing most older games like this (especially Rainbow Six games) have variations between console and PC, for example the PC version of Rainbow Six adds more named operatives (they are unlocked as you progress through the campaign), The intel and briefing screens are reworked and have much more detail as well as being fully voiced, and there are 5-7 new maps, while a few maps from the N64 version have been removed, and there are a few more gear options. in the case of consoles the games like Rainbow Six were watered down as the N64 game pack couldn't handle all the content that the PC versions had.

sounds like you had "rainbow six 3: black arrow".. for the xbox.. its a similar story to r63: ravenshield but more console friendly.. i remember it being a bit linear.. with less customisation.. if you liked the xbox version you will love ravenshield..
I have the GC version of Rainbow Six 3 and as far as I know it's the exact same as the PS2 and Xbox versions. In them you lose a lot of the customization available and planning phase for a more linear path to follow.
