Since Don Quixote always ask Sancho to make his spear because he said its much more beautiful or fancy, does that mean Sancho control over blood is much better than Don Quixote?

Maybe no. I think she just knows how to make it look beautiful, not make it stronger or anything.

I have no facts backing this up but I assume that
Sancho is like a controlled river while don is a raging torrent.
less accuracy but way more destructive in terms of pure power

maybe, as just because he is a greater kin does not mean he is necessarily the best at everything, though I would assume he has a better overall control of blood, i think sancho might have been more experienced in creating spears or he simply was just fond of sancho and appreciated her craft since it likely held a semantic value rather than being more practical than his own craft - personally i think the latter is more likely

Each of them had a specialty of some kind. Based on what we see from each of them Sancho's specialty was making weapons and from looks of it generating a blood shield. (Probably just her being able to harden blood into effective armor at the moment of impact if I had to guess.) So yeah I'd believe she was objectively just one of best bloodfiends at generating weaponry in the PM universe in general given don quixote's family was touted as the strongest one.
