They'll just use their evade sprites instead of defense, even if it looks kinda goofy. I noticed this when Tingtang Hong Lu or Lobcorp Remnant Faust are doing their clash sprite which usually uses a defense sprite, so I assume it'll be the same for when they're used as skins.
Likely going to be having regular sprites, as the special visuals are there to accentuate the status effects. Maybe effects like the auras from Coffin and whatever could still be around, but no one's going to be mounting horses or putting on masks.

Darn, but it would be so funny to have potential man hijack Wildhunt's horse.
It was deemed a necessity because there are some attacks in game (KQE's main mechanic for example) that result in a visual dodge/block when winning the clash against them.
Most IDs have both block and evade sprites, but some of them have only evade sprites, so that is used in place of a block sprite
For example, Remnant Faust and Tingtang Hong Lu don't have block sprites, so they just use the evade ones when "blocking"

Oh, well, I guess that fixes the issue with defend/evade sprites. So I guess it is all about the ID gimmick issues.
