Hong Lu's grandma and Cathy
I haven't read Dream of the Red Chamber nor Wuthering Heights, nor can I read them since I haven't got the attention span to read 400+ page books and I'm a PJM fan so I can't read to begin with.
I want to know more about the characters from the books their based on.

Hong Lu mentions his grandma quite a bit: She got him a job at K-Corp and W-Corp in his Id's, he mentions she kept some creatures like the Peccatulum in canto 2, and he mentions her multiple other times so it seems she's pretty important to both his ingame story and literary counterpart.
Similarly, Heathcliff also mentions Cathy multiple times. His N-Corp and Pequod Id's have him joining those respective groups after she said something to him, and it's implied the worn silver ring he has came from her. I know that Cathy is Heathcliffs daughter in Wuthering Heights, whom he named after Catherine Earnshaw to spite her.

I want to hear potential theories about their roles in future cantos and learn more about the stories and characters their based off of.

I think Cathy in our Heath case refers to Catherine Earnshaw and not his daughter. From what I know (I too did not read it) she was his love interest/lover but either rejected him or was married to another person and Heath, being a reasonable person that he is, started to make her life miserable.

As for Hong lu`s grandmother, unless there is a Chinese person who read it in this forum we out of luck. From what I heard Lu`s literary works is huge and probably hard to translate. Then again, the PM might pull a Gregor and Rodion and only barely or loosely base it on the work (still kinda pissed about it).

If we're like 30% done with Ishmael's story for example, then we aren't even like 10% done with either of them yet.

Maybe with the PM story yes, but with literary work the chance is kinda gone. The Roidion story maybe shoehorned but Gregor is done for (I mean he literary dies in the story). Like are they going to deus ex machina his sister? And I just remembered why Gregor doesn’t like apples (so maybe there were some book elements, huh).

Cathy that Heith keeps talking about is Catherine Earnshaw, his childhood friend and a life-long love. His feelings were mutual but she married another man (whom she loved as well). Another Cathy is Catherine's and that other man's daughter, not Heithcliff's. And he didn't give her a name, it was her father who wanted to honor his late wife's memory (Catherine died giving birth). Cathy and Heith hadn't had a proper romantic relationship, let alone a child, but they truly loved each other in their own psychotic way.
I haven't read Dream of the Red Chamber yet, but my memories of Wuthering Heights are still fresh so I can recall specifics if you need

What is Heathcliffs and Cathys relationship in Wuthering heights compared to what little we know of in Limbus? He does seem to care for her ingame, like wanting his body to return to her in his Pequod id or wearing a ring that he likely got from her and his egoshard symbol having CE <3 HE on it... Although whether or not Cathy returns these feeling we'll just have to wait and see in Canto 6...

I'd say she's almost certainly dead by now since it's a pivotal point in Heith's life and character development. He's a nuisance that he is partially because Cathy's not around anymore to restrain him. Well, that and the fact he was an ill-tempered and vindictive mf since his childhood. But Cathy's death is still the most crucial event of his life and it haunts him every waking hour untill his death

Yeah, after Catherine Earnshaw died Heathcliff dug up her body and says he's been haunted by her ghost ever since.
I'd wager that his base ego bodysack contains Catherines body.
So romantic... Fighting your enemies with the love of your life... Well, with the corpse of the love of your life... But the loves still there... Maybe...

Heithcliff had a son from Isabella Linton whom he despised but married anyway. She was Edgar's sister (the man who married Catherine). Heith abused her and she ran away eventually while pregnant with his child. Years after she died still relatively yound and Heith had his son back only to make him inherit Edgar's fortune through marrying Cathy (Edgar and Catherin's daughter). Yes, they are cousins but consider the time period. Anyway, Heith despised his son just as much, manipulated him and Cathy into marrying, she inherited everything, and the son died before hitting his twenties due to poor health and his ♥♥♥♥♥♥ father's efforts. Thus Cathy's father-in-law takes hold of her inheritance. That was Heith's way of disgracing Edgar and taking over his (Heith's) foster family's land.
Not sure about the ring but in the book Cathy did have a pendant with her husband's lock of hair which Heithcliff threw away and replaced with his own.

I mean she is more than certainly dead. His story is all about spite and revenge, not love, really.
