The main things that effect how a clash plays out are the power and number of 'coins' each skill has. I don't know exactly what the variance is but when two units clash they roll against each other based on their attack and whoever rolls a higher number enough times wins the clash. Having higher sanity also makes it easier for a unit to win a clash.
The catch is that a skill's coins act like rerolls during the clash. So to win a clash against an enemy who has 2 coins your unit needs to win two rolls.
You can get an idea of how a clash will go by looking at the text and lines that appear when you choose your target or skill. The closer your unit's arrow is to the enemy (like on the actual battlefield) the more likely you are to win the clash.
Something else that happens during clashes is that the unit who loses a roll drops a coin. This means they lose that reroll, but it also means they'll do fewer hits IF they manage to come back and win the clash.
A unit's resistances and vulnerabilities also effect how likely they are to win or lose a clash too.
TL;DR: check the arrow and text at the top of the screen to get a good idea how likely you are to win a clash. Skills with higher power and more coins are more likely to win clashes.
