Because I don't think there are some kind of "best" or "worst" controllers it just depends on the individual preferences. I used to play fighting games alot back in middle 90s on PC but I didn't had any controller back then for PC so I just grew up with playing it on keyboard and when I can quickly learn and then properly execute literally every single long combo on keyboard I'm unable to do it on any controller that I have... And yes I played some games on controllers. I used to have PS1,PS2 and PS3 but I never managed to learn how to properly aim or do combos on controllers.
But as far as I know answering to your question about the most popular controller for fighting games I would say it's probably still the the PS4 controller but the Xbox controller is fine aswell if you are used to it.
Ps5 dualsense, leave steam input enabled and you will see Xbox prompts as steam will force mk to see it as an xbox controller. In fact dualsense users had to disable it in order to see playstation prompts.
Fighthing sticks are a different beast that needs to totally recalibrate your mind, way beyond visual prompts on screen.
