I've messed with Scorpion, Darius, Sub, Sector, Jax, Cyrax, Goro, and Stryker and each of them have tons of potential you just need to lab them and find the potential.
The real reason why so many people are using Sereena is because you literally need ZERO lab time to use her and you can easily control the whole screen with her projectiles alone. Any character with a decent string starter can use Sereena without much practice, Which can lead to stupid easy damage.
Imo Sereena is more annoying then op as people just need to practice ways to avoid her projectile or stuff her kameo.
I use frost with kenshi, the freeze its my life saver when I need to switch stance.
Goro's down kameo is his best move. Not only can it be called at any time, but it comes out pretty fast and can lock down an opponent from mid screen.
Goro is the kameo to use if you like making block strings safe, or you want to keep the pressure on your opponent. You can also use his stmop for free damage after a combo if you time it right turning a say a 30% combo to an easy 35-40%.
Goro is definitely a more nuanced kameo, but I think he is really good if you understand how and when to use him.

I've seen Cyrax with his crazy block string pressure, Sector with his rocket setup, and Jax with some crazy unblockable combos that almost lead to 90% damage lol.
Sereena is good but she's just getting attention because people want an easy kameo to use. Many kamoes full potential has not even been touched yet imo.
- Subzero : anti-zoning armor
- Kano : charged ball lets you use unsafe moves > release ball > safe / laser as getup move lets you push away people
- Sonya : side switch / charged projectile pressure
- Scorpion : get off me tool / overhead starter
- Goro : unblockable setups
- Motaro : zoning assist / teleport "whenever you want" (can be used to bait stuff)
- Stryker : lets you 50/50 after any chain / zoning / handcuffs reset
- Sektor : missile pressure
- Cyrax : zoning setups
- Jax : unblockable setups
- Frost : slow projectile pressure / low projectile starter
- Darrius : overhead pressure
- Kung Lao : teleport / low projectile pressure (can be held)
- Sareena : zoning tools / can meter drain (very useful in the corner to disable breakers)
- Shujinko : would require a complete guide, tons of options
Keep in mind that Kameos :
- impact your total health
- don't have the same throw damage (Sonya's throw does more damage than Goro's etc)
- don't have the same charge speed
- have "ambush" assists and "normal" assists (ambush = can be called at any moment)
