Open the game, make a save. Doesn't matter what.
Take one of your old saves and overwrite the new one with the game still open. Now go load the save in that slot.
The graphic when you select it should look like the new one, but it should load the old one just fine.
Okay, so, when you say "overwrite the new one with the game still open," do you mean take the actual game file in the folder and replace it with the old one? Like, replace the new "SaveData1.sav" with old "SaveData1.sav" file?
If that's the case, for some reason, the new game I most recently made did not produce new saved game files in that "My Games" folder path; I can always do a fresh install of the game and see if it will produce the file there then.
I have several "save" type of files in the folder I backed up. I'll list them below, but let me know if there's anything I should know or do with them:
- SaveData1.sav
- SaveData2.sav
- SaveData3.sav
- steam_autocloud.vdf
- SystemData.sav
- SystemData_Trial.sav
I'm guessing that last file is from the 3-Hour Demo version, which I feel like might be the root of the problem due to the file transfer that happens?

Yes, exactly.
Yeah, - SystemData_Trial.sav is from the demo save, you don't need it at all.
It sounds like perhaps your folder permissions aren't working right, that's about the only thing I can think of, though why it suddenly would stop working I couldn't tell you.
But when you create a new save can you go back to the main menu and reload it? if so, they are being saved SOMEWHERE, so maybe so a search on your computer for 'SaveData1.sav' or 'SystemData.sav' and see if anything comes up.
Sorry for the late reply. I realized that the folder issue I was encountered was due to OneDrive holding the real "My Games" folder that the saves were being sent to. After copying the save files into this folder, it fixed the issues, so thank you for the 'switching the files' out advice.
I wasn't really sure why the game chose to save to this folder, unlike many other games I have, but oh well. I'm happy just having the file back.
