It's all about learning the timing. I find backpedalling sometimes allows you to get a few milliseconds more time.
If you don't have time to charge your attack, you can use the right mouse button to block attacks. You can do this barehanded and will take no damage either.
These skills are taught in the tutorial because they're so important to surviving encounters with wildlife and falling into a death spiral.

It's probably best to start a game in one of your other save slots purely to go back and practice the combat tutorial. You are immune to damage so you can some time practising. Otherwise consider using a new game purely to rush to wooden spears and attacking the shorteared dogs near the beach to get the timing down.
How blocking hits work is that you hold the attack button. This will charge the attack which takes a few seconds. When you release the attack button you will stab or swing at the enemy. If you managed to fully charge the bar and connect with your hit, you will take no damage. This is what is called a blocking hit.
Blocking is a different thing from 'blocking hits' and involves pressing the right mouse button as you're being attacked. It takes less time, but blocking hits are superior in just about every way to blocking.

After u Picked up & read the hunters book every shot arrow,
has a 50% chance to NOT lose ANY durability.
Use Bone arrows for snakes, chickens, Peccary's, Tegus & Harpy.
Whenever possible sneak on to your pray & aim 4 the head ( only for Boars,
Jackals, Buffalo& Jaguars) You'd be surprised how good the WOODEN bow is.
The stick bow is Trash & a waste of long sticks.
BTW 1 obsidian shard (+3 sticks & feathers) makes 3 obsidian arrows.
Boars can really ♥♥♥♥ you up on hard mode! But 2 FULLY charged hits usually kill it in the head. If you hit them critical it also cause them to Bleed & when they get on low health they try to limp away.
Once i hit a Jackal from about 70m right in his stupid face, it then chased me, But died (from blood loss just a few m in front of me.
I use the Obsidian spear only for pests, Harpy (if they annoy attack me) & Tortoises.
The more you use the Wooden Bow naturally, the better ur aim gets but also the skills make it much more efficient. IMO the best weapon currently in game. ( the crossbow is slow & expensive garbage) Make a bamboo bandolier (quiver) cuz it has much more durability than the leaf one.
If the critter is further away hold down LMB. Wait for the red tips on the charging bars then release to attack. That will give you a stopping attack. Or, you can become a block master and just hit RMB when they are attacking to block the attack.
Punched out a harpy the other day with just well timed attacks and blocks. Once you get the combat down you should be solid.
Just to be clear, you are not shielded when holding down the button and you will not counter attack automatically while holding it down. You release the button to launch an attack, during that attack you are shielded. So you time the release of the button to line up with when the attack from the animal is about to get you, then you are shielded from attack while you hit them.

Wait you block? Humm... must be doing somthing wrong, everything is dying when i hit them.
Then again i use Controller... and move faster probably... just got Mad Dodge.
