Red bar above customers?

Does anyone know what the red bar that will randomly appear above customers that rapidly ticks down? I have no clue what it is and I can't remember if there was something in the tutorial that talked about it. I noticed it stops if you run next to the customer but that's the only thing i've figured out about it.

That's the dine-and-dasher warning bar, if it goes to max they will attempt to leave without paying. You can still catch them as long as they don't reach the door and make them cough out the cash.

oh, i remember that but i didn't know that was the indicator for it, i never had it run out. makes sense though.
