Whats the difference between different types of customer?
Are they have preferences on ordering specific type of recipes?
Cozy = Townsfolk
Regal = Children
Vintage = Elderly

Explained in the book.
Children are mostly ordering cheap, they have low patience.
Elderly are slow and take their time with everything like walking, ordering and eating.
Soldiers eat fast cause they dont have the time to stay too long.
Nobles have to be served by you, they order, but dont go for the food themselves, you need to bring it to them.

Cozy, Regal and Vintage are decorations that increase the amount of customers in that group. So there is no point to add Regal items to your restaurant if your reputation is not high enough to serve Nobles.

Oh, you are right, did not look at them actually was thinking they are for nobles since they look like noble furniture and was ignoring regal decor.

Assuming the nobles are the ones with the monocle and dragon like tails, they do get up for their own food. I got a tip saying that want to be served but they still get up regardless. Are there any pros to elderly? Are there any furniture sets that attract soldiers?
(edit: I was mistaking tourists for nobles, haven't found any pros for elderly yet, and medieval furniture attract soldiers)

Dragon like appearence and monocle yep thats 100% not a noble, thats a tourist, check the book about customer groups.

Im starting to think Regal, Cozy and others are not really meant to be tied to a specific group just seen Vintage item and it also was having a children icon, this is either bugge, or the name and what group they impact actually have nothing in common with each other.

pretty sure the name isnt really attached to the group they impact, as you said regal affects children, porcini(iirc) comes along once in a while and sells a window that affects nobles but its like 10k

Are you referring to the art book? I'm unsure what book you would be referring to otherwise. (Edit: I see you are referring to the journal in game, I see the designs for the nobles now)

Thats the one I meant, what you described as a noble is based on the journal entry a tourist. Nobles look differently.
