Horned Deer unkillable?

I started a new NG+ game on very hard difficulty, and I'm trying to kill the Horned Deers, but one always misses their attack, and I can't break their barrier. I also tried using the Soul Sword but I don't have it in my inventory, and when I went to look for it at the spring in the Temple of Aimhard, it wasn't there either.

I don't know if this is a bug or am I doing something wrong but I can't get past that door because of this.

Use absolute defense

Or another weapon that pierces defense, there are a couple besides the soul sword.

I'm using absolute defense but if they miss I can't remove the barrier on them

You can use Lightning Bell's Bell Fire skill

I found the tarnished soul sword in the underground prison (right side of aimhard temple) after passing the 1st barrier you see on the left in a chest.
