The official way is to continue the quest up to the Ice Demon Quest then fail to save him.
The other way is to successfully save him and have an empty slot in your party. The Old Man will join afterwards. If you give him one of the Toxic items that cause instant death, you will kill him permanently. You can leave the sect afterwards.
Also the Skills you get from the Old Man do not have a type. Even though they are categorized as Fist, they do not have any weapon restriction and give you every External Stat. I've been calling them Omni Skill more than Fist or Sword Skill.
I like to think that means they use the stat of the weapon you are using (which, paradoxically, would make them BETTER for non-fist user as they'd give you nonstandard areas for your weapon).
However, I admit I haven't actually tested it.
He will no longer be in your party, and you will not have the Master to the Rescue Trait if you did it properly.
Was sure I could see it in his dialogue wheel when interacting with him, but was my first time through and was planning on going all the way so didn't try it.
