I released the chicken to get the boar later. Now I want to do the chicken fight for a quest, but I have no idea if the chicken is gone forever now. I figure it might be back in Nameless village, but no, not there.

Animals you release either go back to the original place you found them or if you unlock the personal home you can send them there instead.

Something bugged then, because I cannot find the chicken in the village, where it's recruited. Maybe once I unlock the homestead?

If you didn't unlock the homestead yet it has to be on the village. If not you must have find a bug.

The Rooster might be bugged; I released it to get the Boar and the Rooster never reappeared in Nameless village.

I had the same with the boar, I released him before homestead and is not to be found (neither homestead nor forest)

Sounds like a bug then. Is this chicken fighting quest essential?

Nope, you can skip it.
It's some relatively easy money + a combat buff to the chicken and that's it.
In general terms, if the question is "Is X essential?", the answer in this game is "no".
