Danger 5 can be won consistently with sufficiently good play. But there is a lot of room to build both execution skills in the combat phase and strategic choices in the shop phase.
Since your screenshots are only from post-game they don't give me much to comment on for your decisions tripping you up early on, tho.
For Farmer specifically, Pruners are definitely their strongest starter; they obviously aren't strong as direct weapons given their other benefits, but they are still decent enough weapons as you get them upgraded. Splash in some Melee Damage when you find efficient sources of it.
Dying before Wave 10 regularly may imply a general discomfort with short-range melee weaponry? It definitely took me a long time to get comfortable using those types myself. A little Speed definitely helps, say 6-10. Some Range may be helpful to let you attack from safer distances (and hit more enemies simultaneously). Dodge takes a while to build up enough to be worth anything, so it's a very bad stat for the earlygame; better to focus on HP/Armor/Speed/etc. instead.
Also worth keeping in mind you don't need to kill everything, especially those Tall Bruisers on Wave 8; most of your income will be coming from building up Harvesting, so missing a few kills isn't a big deal.
I get the build up of harvesting so i'm no trying to kill everything, but at least trim their numbers so i don't get cornered avoiding the big guys and killing the small ones (or try to rush eggs on wave 7 because if i miss them early i then have to run in panic for the rest of the wave)
I usually start the first 3-4 waves trying to line them up for efficient use of the thrusting attack. Then as the number of monsters rise i start running in small circle trying to keep control of the center, but once i lack the damage to control their numbers i end up running for my life on the edge of the map (like wave 9 that i usually find easy and free materials because with other toons i just one tap them).
Had an easier time with doctor with scissors having the same attack pattern and range but with a headstart of attack speed, regen and built-in life steal. Or knight and passive armor and higher base damage of rocks.
I'm also confused about some of the hitboxes where i take damage even if it seems i didn't collide with the monster, like it got extra reach despite having no arms.
But winning on D5 just really means knowing the Brotato you're trying to do it with and playing to their strengths. You also need to mind which waves are which, like you'll get nearly over-run on the horde wave but then be fine after it for instance and you need to be strong enough to face your first Elite.
Edit'd: Just did a D5 (Abyss) run on Farmer, won easily and went onto Endless to wave 52, using the Pruners. Just started out risk adverse, focusing on either getting fruits at 100% HP or finishing the wave at full health so I'd get them all. Took a bit of damage, but mostly focused on regen, dodge and HP so I was as tanky as possible, making completing each wave at 100% HP easy enough so I could reap the maximum benefit and then used the money to buy damage stats like attack speed and melee damage, only had about 30% Crit (bad RNG) by the bosses but killed them both without much of a fuss.
I just did Demon. Figured the blade with hp scaling could be the way to go.
After a few tries I noticed I did better taking the most risk in early waves by spending as much as possible within waves 1-3 leaving me with a single hp, then save materials and start scaling.
Was lucky enough to hit Greek Fire and Giant Belt so I was melting bosses. But after wave 30 I got baited into 2xExcaliburs which had a way better hp scaling but removed all my armor. Enjoyed a few seconds of 4k crits before I got 1 shotted xD
Specters really need attack speed to be strong, though and some form of piercing helps a lot if you don't get Baby with a Beard, or Ricochete. They also benefit solidly from flat Ranged Damage. And yeah, you wanna risk more in the early waves where surviving by just avoiding damage is easier to do.
Usually I look at a character and think which stat do I need to max get damage on him and which stat do I need to keep him alive. And I mean a singular stat. Maxing several isn't gonna happen until wave 15 and I only get there when I am already doing a good job.
Many times it's also a thing of luck and a level 3 or 4 item early on is a guaranteed win. But even more so I lose many times no matter what items I go with or how I build. The generalist for example seems so simple, yet in over 20 tries I have only once made it to Wave 20 and still died there. Yet with many other characters I won on my first try.
My only tip is to specialize with each character, think of what is best strength is damage wise and survival wise and focus on those. Farmer for example is a bit special, because he focuses on farming, which lets him buy a lot of ♥♥♥♥. He was a first try win for me, but I was super lucky to get the crown around wave 8 - 12 or something. I also took the pruners just to stay alive and get money through farming. I played him much like the Pacifist.
By the way for anyone wanting to practice dodging play the Pacifist. He is the perfect tutorial character for that.
i cut your post to avoid creating a wall of text (still kinda turned into that regardlless ... :) :
first a couple things : with most chars bosses arent a MUST aka you can reroll your run to get 2 horde waves in the mid game and only one boss at (for example wave 17 or 18)
giving you more time to get your stats/weapons in order to easily deal with a boss
for the sake of the argument i think it fits i take the farmer as the example of the explanation

so if you compare this run with the screenshots you posted you might notice that alot of my stats are alot higher
and while RNG is ofc always a factor, if one doesnt get totally screwd by RNG you can get this in alot of runs
with the farmer 6 pruners works fine, if you can get 1 or 2 sickles that works really good aswell but it isnt needed(also it helps a ton)
whats important is avoid getting hit at *all* cost so you can collect the max amount of fruits to pump up harvesting, which will be your main money maker from 1 - 20
what do i focus in terms of items :a decent amount of luck, a good amount of regen cause you will get hit and you want to heal up from fruits as little as possible, a decent amount of armor same reason, after that dmg : so base melee, attackspeed, crit and range then once the health / healing / armor and dmg part is at a lvl were you kinda comfy sprinkle in some dodge
(cause there is always the chance that the hoddy drops and when that happens and you have 0 or negativ dodge thats just crappy)
negativ range is totally fine for a 1--20 run its super crap if you want to go endless
at around wave 18 you should look for a range weapon: idealy either shurikens / Javelins
as they scale with melee which you will have a decent amount
or a heavy/ele : so flamer , etc if the only decent range that shows up is a gun (mind gotta be a good one thats still okish, still enough time to build up dmg, but i wouldnt only pick a truely strong one
a last thing towards endless : HP and ARMOR are absolut useless at a certain point
with MOST chars, atleast in terms of that you can bank on them saving you
the only 2 things that will trully get you far is : dmg (lots of it and lots of dps) and tardigrades

sure it takes a few waves to get rolling, but the harvesting stacks up really fast.
not getting hit in the beginning is like the only thing you have to do.
can pick up a sickle towards the end to just oneshot everything with the harvest scaling and 2000 harvest.
endless is kinda bad for farmer since his whole gimick is harvesting which gets reduced after wave20
i forgot how broken farmer is but i do get that it can be a bit weird to transition out of pruners and starter support gear for better stuff.
