Harvesting gives you resources at the end of each wave, and resources in the sack double that many resources you pick up until the sack's empty.
We just don't have it in demo version
If you have negative harvest, you will LOSE resources at this moment instead. You will see your resources go down, and the number that appears by your character will be red and be negative.
The resource bag is unrelated to harvesting.
The bag is simply a collection of all resources you did not pick up that wave. These are carried over into the next wave and are added to the initial resources dropped by enemies until they are all spent. This is shows by those initial resources being slightly larger, and when collected will show "x2" indicating it was worth 2 resources instead of only 1. As those are created and collected, you will see the number by the bag going down by the same amount, until the bag is empty/goes away, then all resources dropped go back to being normal.
(things like the metal detector can also increase the value of the resources, so if you have that item, you will see the larger resources that show "x2" when picked up even more frequently. If you have the bag carrying over resources and you have a metal detector, you will sometimes get "x4" resources from a single pickup, as the bag adds 1 to make it double, then the detector doubles it again. When that happens, it still only counts as -1 from the bag)
