Fisherman requiere to have some dodging skills if you take baits, doesn't need to be Godlike but if you are very bad at dodging you'll have trouble.
Go to options and put the difficulty sliders to the lowest next time you have trouble with D5.
That's all I can think of, for me it wasn't very hard but I'm used to dodging so my reaction skill is above average I guess. Maybe I have a video of the fisherman challenge to show, maybe you'll learn something after seeing it.
You have early AoE to deal with spawns, a bit less safe than spears but manageable.
You can invest in armor and it double-dips on damage which is nice.
Regen is too slow to save you, but the usual Luck + health from consumables + mob density works fine.
With shields the low speed is also a problem that requires fixing, but you get a bunch of defensive stats for free.
For me the hardest was not to kill myself spawning too many baits early, and wave 7, because you cannot really dodge both fish and spiders with low speed.

Also, Deathraven thank for trying to help me, but since you said yourself you have problems with D0 - D4, I don't think I should take advice from you. Also, it's okay you need to set diff slider to low, but I'm fine with them on normal :). Also, I cannot trust you that you can beat the game at all with this class, since you didn't post a screenshot.
yes I've struggled hard in D0-D4 when I started playing, then once I've reached D5 I was good enough to beat D5 without trouble.

If you struggle that hard you can lower the difficulty in the option, remember that you are struggling in Vampire Survivor too since you can't do the HIGEST DIFFICULTY, the real one because for you using golden eggs and aracanas but no Inverse mode was the HIGHEST DIFFICULTY but it was as if you've played D5 with all difficulty sliders down so don't worry it's ok if you are not good in both games.
CHIPOLLINO build should help a lot of players if players actualy struggle in D5.

r1 grab shotgun kill as many enemy as u could also focus on choping down the trees
as level reward take 1+ range dmg or move speed (u need about 6-9% move speed to easeally dodge thouse worms attack early on)
r2 buy all shotguns u offered and start buying 1 bait every other round(exepts boss rounds)
r3-r9 focus on taking all range dmg from items and lvl reward (try to get 30hp)
in about round 6-7 u should start feel that bait worms are became a joke to u so buy 1-2more baits every round
get abouy 5% life steal
r10+ start working on u armour and doddge buy every bait (so take X free rerolls are good idea
artifacts i wanna suggest to this build
+1 bounce (as manny as u can find)
+atleast 2 pumpkins
+ extra piercing
+crit deals 1% current boss health
end on 163 baits

That's a pretty good build, thank you for sharing it, now even OP can probably beat D5 with fisherman without much trouble.
Have you tried the fisherman challenge yet ? (Must always pick baits, must always reroll if you have money to do so in order to take bait unless you'll end up at 0, since bait cost 1 rerolling to get nothing is not right).
If your build can crush that then It's probably one of the best build for fisherman.
Went with lifesteal knives, got a couple medkits, got a couple rip and tears. Was absolutely unstoppable towards the end
