If you want a little more skill in dodging enemy attacks and a lot more meaningful choices while developing your builds, go with Brotato.
Brotato got a lot of RNG, maps are pretty boring (a square, sometimes with trees popping), endless mode is alright but endless in VS is better, a lot less options than VS, no meta stats, can't really make your dream build (RNG).
Beginners going in without much knowledge will take hours to beat D0 wich is the default difficulty, once they master the game they can beat D5 without much trouble, of course it's a SP game so some people can just cheat.

We don't know yet if Brotato will have DLCs nor a lot of updates after 1.0 nor a co-op mode.

Brotato takes place in the same small arena box, and there is no progression save for unlocking new characters, items, and difficulties. Every run starts you fresh, and succeeding requires putting some thought in each game. Easy to pick up and play, harder to get good at.
What you've said is not true, saying that Vampire Survivors is easy because you allow it is like saying brotato is easy because you play at D0 with all the sliders down, in both games you have the option to make the game very easy or very hard.
I think the main question to ask yourself when talking about differences between the two, is if you want a sleepy style gameplay with a casino like presentation going... very flashy. And more dependent on your build choices-
Or do you want a twitch reaction/dodging and gameplay thats more of a mix of build+skill.
Or do you like them both? Both is an option. Both is good if you like this kind of game.
I'd say VS also has more to it, but its also an eyesore. It's expansive "maps" are junk, the effects are too flashy, and a number of things about it suggest that it was made for people easily entertained by such things. But I do feel it has more depth to it than Brotato despite this.
In Brotato's case, its narrower scoop gives it higher quality on what it does do. And is better suited to people who can think fast.

VS pros:
- Multiple game mode and multiple options (make the game easy or impossible)
- Multiple characters
- The more you play the stronger you can be
- DLCs
- Multiple different maps wich can hide secrets (so not just a square map)
- Can get rid of RNG meaning you can build how you want
- Co-op mode planned
- Got an ending
- Can unlock stuff with codes
- An option to cut by half a session
- Mods (no steam workshop but other website offer them)
Brotato cons:
- Less gamemode options than VS
- New players usualy struggle for some hours to beat D0 if they didn't do some research first
- Most items don't keep on growing in endless mode
- Can't really feel powerfull after playing for hours (no meta progression)
- Once you know how the game work D5 is easy, you have options to make it a bit harder tho
- Heavy on RNG wich you can't really counter unlike in VS
- Most characters feels like you could go glass canon then tanky later, so builds can be samey
- I've muted the music so I dunno if there is just 1 music but it was nothing very good.
- FPS drop if there is too much actions (wich unlike VS can kill you because you can't just stand here and survive)
- Boring to have to win with each characters in order to unlock more stuff
- No real endgame (so can't aim to be the strongest being unlike in VS)
- GODOT engine can have issues (like crashes)
- Hard to balance due to RNG, some will tell you that certain items/stats are crap, ask around if "Riposte" and "HP regen"
- Maps are boring (just a square)
- Update 1.0 is currently buggy (some people can't start the game, see recent posts)
VS cons:
- Aside a few characters most character feel generic (if you have 4000 golden eggs you are just too OP anyway), making them more like skins
- Tetris dizziness from collecting gems (you close your eyes and you see gems getting collected or graved inside your eyes)
- No workshop
- DLC cost money, granted it's like 2$ but I'll add that as a con because I'm having a hard time finding more
