What make you believe that achieving wave 1000 is impossible ?
These achievements are good idea, but it should be more like:
Reach wave 40, Reach wave 60, Reach wave 80, Reach wave 100.
Well I'll try to reach wave 1000 since that's the only challenge the game can offer for now, granted that the FPS drop a lot.
I'll say I'll prefer to try to reach wave 1000 rather than D5 all characters when it's very easy to beat D5 to begin with.
Well it is optionnal, but having achievement for it means that it wouldn't be meaningless. In Vampire Survivors you play endless mode for the challenge and for farming gold.
I try to go for 100% whenever feasible but achievements artificially extending playtime are one of the worst offenders. You could argue that current dozens of characters are already a stretch, but I'd say they are different enough for each run to be fun.
You could unlock characters skins (even if it's just color change) for reaching wave 100 for each character, at wave 1000 you could earn so crazy weapon with a toggle to turn it off as it would be very strong (like a golden gun that can instant kill, Goldeneye 64 reference).
Since we get updates every 2-3 months that would keep us busy, now I have all achievements without much trouble.
I could also play Vampire Survivors if I wanted to be bored.

After achieving D5 on all characters and having almost no trouble doing it so endless mode is all we have, granted that endless mode is more fun in Vampire Survivors because you get gold to spend on characters via golden eggs.
As I've mentionned we get updates every 2-3 months it seems so we would get more content by get a reaching wave 100 achievements with X character, people didn't ask for an endless mode with no purpose after all, getting skins for achieving endless wave 100 and some cool weapon for reaching wave 500 & 1000 is a good idea. In case you don't know you can pause the game and return to the main menu, then when you play again you can resume and you'll be in the shop of the wave you have stopped, so you won't have to do it in one sitting.
As if it would be boring the answer is no because you'll have to stay focused at some point since you may get oneshotted and at a certain point all ennemies will be elites, fast tanky elites than can oneshot, that's the challenge I wanted.
I like to pop it from time to time for a run or two but my backlog grew way too big to stick around one game. As an achievement hunter I'm usually done after perfecting game but FUN early access games (like Brotato) keep messing with my go-100%-and-move-on approach (blame here is on me for impatience!)

Game is still in early access and I honestly do not have a clue why - core gameplay felt pretty much complete since it was released (outside of the mentioned mods' support and some very good gameplay adjustements, i.e. regeneration and life steal overhaul).
Endless mode, new items, and characters is an extra treat but at some point this game SHOULD be "complete".
Well it's on beta because it doesn't have everything, we went from build 0.6 to 0.8 IIRC so the game is still missing some intended content wich may be endless achievements unlocking content.
Achievements is what keep most players playing because you have unlockables, in Vampire Survivors you always have the goal of making each characters very strong, in Brotato there is nothing for it aside seeing how far you went with an endless mode.
Players asked for an endless mode but not a meaningless endless mode, it's like if devs added characters but no achievements and no unlockables, not a very fun thing.
I have all achievements and all characters have defeated D5 without much trouble aside 2-3 characters but I still have a 100% winrate for D5. Beating wave 1000 doesn't seem impossible but I am not there yet, maybe in 3-4 days I'll be able to reach it.
