If you buy bunny while you have bunny active and reroll, then the bunny you just bought won't do anything until next shop. But if you lock bunny, use the already aquired bunny's reroll, and then buy the new bunny, it'll apply immediately. This makes me think that the game counts bunnies and each time you enter the shop or reroll does -1 to the number and sets reroll cost to 0. Additionally, when you buy a bunny, it has a separate trigger to set the current reroll cost to 0, rather than adding +1 to the number. That's just my guess from observation though.
There is no difference from when you buy it.
