Honestly, though, I think Star Wars would be a terrible choice. The very mode of combat wouldn't fit the TW formula, so it would either be a terrible Star Wars game or a terrible TW game.
If I got to just get what I wish for, they'd make Mughal Total War with the area from East Africa to southern China in the early gunpowder age.
Any early gunpowder/renaissance game would be good, though.
They probably are done with Bronze Age games because they don't sell well and we already have the early republic era in Rise of the Republic campaign DLC for Rome 2.
I think the most likely total war will be something they have to license for like warhammer trilogy. AGOT, Marvel Comics, Harry Potter, even Star Wars although I think that franchise is too controversial.

As for star wars the best on market by far in my opinion is empire at war.... cant see TW formula comparing with that.
Then with both games you have to increase range and distance if going to incorporate the weapons involved.... you would need to be like eugen war games tactical battles to do it properly....
The other problem with WW1 is that once battle lines were drawn.... it barely moved..... not exactly a very exciting TW game where you are supposedly conquering territory, it wouldnt be WW1.
