Replacing school wall

can the school walls be replaced with other wall motifs without demolishing them first?

Yes, just draw the upgraded building type over the existing one. It won't get in the way of anyone using the facilities inside, although you might have trouble clicking on things there yourself while it's upgrading.

Juts for info, you can also downgrade the same way.

I had upgraded my wooden buildings into concrete level, but i found it ugly looking so I downgraded to brick. Though I think youre not refunded by doing this, unlike destroying the section first then building a different wall.
