Gaia is also a economy minded God.
Freyr (Norse) is the only major god who officially focuses on defenses.
It's questionable if Ra (Egyptians) is good, but his abilities and minor god choices force you into a more defensive playstyle.
In general gods with an economic bonus (Isis, Odin, Thor, Gaia) profit from prolonging the game to make more use out of those bonuses.
with eggy youre forced to do FH and FM, so even though thats "defensive" its actually very high APM required and actually really hard and not for slow players at all

For the Greeks any major with Hephaistos is good for late as you can spam abundance. But my fav late pick is Zeus with Hera as the last minor as you can field armies of overpowered myth units ( especially the hydra ).
My personal late fav against AI is Thor with the Dwarven forge and all its minor god berserk upgrade. He is a good pick as he has extra forge upgrades and can spam berserk for favors + Fimbulvetr god power.
However that's mostly for co-op against AI.
then Isis is indeed the best choice, simply for the fact,
that she is the only one who can block god powers. (at least for now)
Ra and Set are also pretty good for turtling, (Sekhmet's Citadel GP is pretty nice)
but much less so than Isis, who is probably the turtle queen, at this point..
But if you want to mix things up,
i'd say that Atlanteans are generally also pretty good at turtling:
Gaia has her lush, (regenerating structures/units, and stronger eco)
Oranos has his sky passages (great for defending at multiple fronts)
and Kronos can teleport buildings; (which says it all, really..)
and Oranos/Kronos have access to Helios, for mirror towers and Vortex. (mass teleport)
For Greeks, Hades is probably the best choice, thanks to his Sentinels GP;
and Athena/Apollo/Hephaestus also have great GPs for turtling.
However, with Zeus/Poseidon you can get Hermes, for his Ceasefire GP,
which is probably (one of) the best defensive god power(s) in the game.
And for Norse, Freyr and Thor should be good choices, (especially Freyr)
With Thor, you get extra lategame armory upgrades, a stronger economy,
and he gets guaranteed access to healing, in age 2. (Freya and Forseti)
With Freyr, if you go for Aegir, in age 3,
you get an upgrade that makes all TCs and hill forts able to heal units,
and you can also go for Ullr in age 2; who can summon special hill forts, (infinite hill forts..)
that also work with Aegir's upgrade, to make them able to heal.
Or, in age 2 you can go for Valkyries, for even more healing. (and mobile healers)
