Why did they remove Hathor?
Why did they replace Hathor with Sobek (Hathor)? Seriously, it's a head-scratcher. There are multiple other fertility deities present, they even added one for the Norse (honestly I didn't know they even had one), so why did the Egyptian one get cut? What was wrong with Mediterranean Cow-Mommy? And why append Sobek's name with (Hathor) in parentheses? It makes the decision to remove her all the more noticeable.

if you really need cow mommy back I suggest being patient, there is a not insignificant chance they bring hathor back with the 4th egyptian god, which is likely already in development.

Because the Norse were hungry for Hamburgers and ran out of cows, Also Sobek looks cooler.

Jokes aside, Perhaps a new god pack will bring her back as a major god, or maybe a minor one again. Only time will tell.

Weren't all of the Egyptian deities blood relatives? (With the exception of Ptah, of course, who thought himself into existence). I mean, the Pharaohs practised first-degree incest like it was going out of style. Since they were viewed as gods-made-flesh, wouldn't they share that enthusiasm?

The only relation between Hathor and Sobek is that some citations referred to Hathor as one of Sobek's cohorts.

The only relation between Hathor and Sobek is that some citations referred to Hathor as one of Sobek's cohorts.

Eh, well fair enough. But you could see why it's not too much of a stretch to assume a blood relation, as there was very little difference between 'cohort' and 'consort' in ancient Egyptian mythic-royalty.

What info I can dig up with a quick search tells me that at best Sobek was an uncle of Hathor.

But it seems like the Egyptian gods have kind of a messed up familial relationship going on with Ra being the father of Hathor, the consort of Hathor, and the son of Hathor. So I can see why this subject would probably require some real study to really understand how they all relate to each other.

What are you talking about? Yes I think it's stupid that they made her a tree. An ugly tree, when she wasn't one before. If this was a new game and not a remaster I wouldn't be as annoyed. And?

Combined with the descriptor "the protector God who draws off evil", being able to safely guide troops through the underworld would also apply

Underworld Gate meaning an Entrance to the Underworld, Hades, ruled by Hades, home to Hades, the dead, Cerberus, the Titans, Tarturus, and other beings.

I don't really mind the Dryad Gaea, I wouldn't mind if she had an alternate skin to make her look more like the Earth rather than a Nymph or a Dryad. Like, what if she looked more like the Earth coming alive?
