Sanchez Isn't a Star?
So the guy who substitutes for Mathiu and let's you change characters, Sanchez, isn't on the Tablet of 108 Stars. Is that an issue for me getting all characters, or is he just not one of the Stars of Destiny?

If they aren't on the tablet, they don't matter.

Keep playing on and you will learn why he not one of the stars. There a quite few characters with portraits that don't appear as 108 stars.
