When is the best hours to run the boathouse?

personally i always set aside a whole day for it. sleep from 7pm to 7am, rush out the door, take the shortcut (once unlocked) then toss two logs into the boiler and open around 8-ish.
I usually close around 10pm but last guest i accept is around 8pm so i have ample time for guests to leave and dont have to run around all the baths picking up towels.

How do you know when it's the right time to close how do you know when you're not going to have any more guests? Normally I close when I run out of wood

Setting up your bath at around 7-8 a.m is a good idea because your character gets tired easily and will probably run out of stamina around midnight. You need at least 7 hours of sleep to restore your stamina and spirit vision so you don’t really have a lot of time to run the bathhouse or maybe you want to spend a bit of time with the villagers in the evening before going to bed

As you progress, the game allows you to use more than 4 logs per day, but if you run out of logs before 10 p.m that’s okay too. I also recommend not putting more spirits into the bathhouse after 8 p.m and just wait until the rest leaves for maximum profit
There really isn't a best time to start or stop. Guests will come in steadily as long as you choose to stay open, day and night. You can be open every waking hour if you want, or open for a couple hours to get a little extra spending money for BBQ and karaoke later.

For a while I was struggling to figure out how to stop a carrot thief at night, so I would sleep during the day, open the bathhouse at night. I never ran out of guests even when I ran out of wood and the water got cold (oops). It's not good profits if you sit them in cold water, but the guests keep lining up even for cold baths. I didn't realize my mistake until the towels stopped drying.
