I stopped caring about level 80 and finished the game. At this point I did all quest and killed about 5 % of all the monsters in the game world.
For killing all the monsters in the game world it will take several weeks at least. I woud even say months. This is because yeah technically there is no respawn but being on a place doesnt guarantee you all monsters already have spawned. I had many instances where some didnt spawn and they spawned later for some reason. Also the ghosts will increase your amount of work. And to find all is like sisyphus labor.
Killing everyone and everything does not make any sense, because the best level to finish the game is about 50 to 60. It's because you don't get any (better) parts to improve your equipment (armor/weapon). At level 60 or higher you can collect some ingredients, brew potions to improve your stats and kill some animals on the way.
It gets a bit boring to play this game that way, but at least now I know it's not at all necessary to explore everything or complete every quest. I agree that level 50 or 60 is the most I've ever needed to finish the game with all of my other characters.
