When you open the crafting menu with C, is cured meat there.

I have no idea. I can see it but it's locked and doesn't appear to be at any of the essence traders currently....

I haven't seen it anywhere and it's not listed in any of the traders in the guide. But I have gotten it as a drop from the Bound. I had two of one type and one of another at one point but ate them. Kept them as my emergency stash. Now I use fish patties :D
