So this covers two major groups: A metric $*#& ton of QOL changes we already planned before launch happened and finally got to push out AND major overhauls of some huge stuff to help with performance.
We're hoping this helps other people who were struggling finally get to play their copies.
1. Ambulance Life REQUIRES installation to an internal SSD. An incredible amount of issues pop up with HDDs and using externals of either flavor. Folks can natively transfer their game installations to other drives using Steam:

2. Verify the integrity of your installation files:

3. Delete your existing Game Settings file and let the game re-create it:
- First, close your game.
- Next, delete your "GameUserSettings.ini" file.
- Lastly, restart your game. The developers are actively monitoring.
