I own both RIMS and this one, and the major difference is that RIMS is about closed circuit racing, while this is (obviously) street racing.

1) Regarding physics, both games offer different realism settings for you to choose. I drove both on the most realistic one, and I have to say that I found the physics in both games convincing. As I am not a professional superbike driver, I cannot really judge which are closer to reality, but they are definitely both fun. I noticed that in RIMS, you feel a lot more the effect of instability when accelerating or braking in corners. That is not to say the effect does not exist in TT3, it just seems weaker (it is very weak in Super Sport class, but you can definitely feel it in the Super Bike class). RIMS was a lot harder to learn for me than TT3, but that may also be because it was my first serious sim of that type, and I learned TT3 when I was already way more experienced (and had played TT1 and TT2).

One thing I struggled with a lot in RIMS in the beginning was leaning in a tiny bit too much, and then the bike touch the street (especially in places where the road surface has a small bump in a corner), leading to ugly crashes. This feels way better in TT3.

2) Can't say, haven't done that much of it in TT3 yet. I like racing but I'm not interested in tuning, all I do is: when I won some money I go buy a better part or replace broken stuff, without looking much at the differences. In RIMS you have that mini game that you have to press buttons to actually change parts, but its not as annoying as some people in that steam reviews make it, believe me.

3) I really like the graphics of TT3, it's a beautiful world that feels very real, and it's something fresh for me. If you have played many sim racing games (I have many hours in ACC, AMS2, rfactor2, ...) you know those official circuits and you have seen them in many games. Even if they look a bit better in one game than another, to me it does not cause a great wow effect. But the Isle of Man in the graphics quality offered by TT3, this was something I really appreciated. (The only thing I did not like was that the hills in the distant look strangely white on my system, like there was a bit of snow on them).
