I know the capability to trim the plants adds a lot of processing, but my computer wasn't even close to struggling when I hit the limit.
That said, I would really like it if there was some kind of increase as the spaces opened up.
I'm about to begin the creative mode. You start with everything that way. I don't know if there is a limit there. Anyone tried it?
MAYBY it´s a little bit more than in story mode...
I counted the flowers in my story garden and could only find 300-330 flowers. But they are scattered and maybe I missed some.
But in creative u get 99 of all the seeds so it´s easy to count based on this information. I took 500 Seeds and after 400 in creative I got the message.
I got the message in creative after 210 plants. I did a creative where I put every plant in rows so they would be easy to count.
We're currently conducting tests on our Discord to see how machines react if we increase the plant limit.
Just put a button in the settings menu - "Remove plant limit - warning, this might result in the game crashing due to lack of memory on low end systems". It's Unreal engine - I've seen it render factories in Satisfactory... I'm pretty sure it can take a bunch of flowers in a garden.
PS: I got to this point to, my garden feels kinda empty - there'a ton of space everywhere but all I can do at this point is spam decorations or something. Flowers have hundreds of variants - it's not possible to have them all this point because you would have to have one of each and this would make doing jobs almost impossible.

An option to set the maximum plant count ourselves would be really great!
Disney Dreamlight Valley did this as well for their maximum item count, irrc. Planet Zoo has a similar situation with its visitors. They eventually implemented an option for this as well. City Skylines has it as well for their traffic/cars.
