however I have an assumption about the highest point achievement possibly involving the plant clematis.
To anyone trying to get this achievement, maybe my experience will help:
The achievement features stacked plant pots, so I got 2x Pot Towers and stacked one on top of the other, but that did not unlock the achievement, leading me to the premise that "sky is the limit" achievement title might be referring to climbing plants. So I planted some jasmine near the stacked pot towers, but days passed and jasmine never grew very high despite using the Quick Growth Fertilizer daily.
I scoured the plant book and noticed that clematis is a climbing plant with the following information: "The first year they sleep, the second year they creep, the third year they leap."
Therefore my theory for the achievement is to plant clematis and wait 3 in-game years for it to grow very high.
If anyone already has some clematis growing in their 3rd year, it would be very nice if you could let me know whether this theory actually works.
I cannot get ANY other climbing plant to climb though. :/
Oh my god. Bless you. I just got the achievement by using 14x simple wooden pallets as a staircase.
Would you mind if I quoted your comment in the achievement guide? Since I did not find the solution myself, giving credit feels like the right thing to do.

That leaves only the Koi-Lect Them All trophy as a mystery.

There is a koi statue you can craft. Dunno how to unlock it but my guess was that I need to collect all ponds available, I noticed the statue after that. Next day after I placed it I got the achievement."

Collecting all ponds did not work for me.
It's not about collecting the ponds.
The crafting recipe for the Koi Serenity Statue is tied to Ema. After completing her fish statue, she gets the idea for a koi statue and plans to talk to her boss about creating it. The crafting recipe became available for me a few days later (1st day of next season). I placed the crafted statue and one simple pond in the community garden and unlocked the achievement the next day. Not sure if the pond is necessary. Hope this helps.
After, sell the snowman bases for a good chunk of money ;)
