NVENC Error: EncodeAPI Internal Error. (NV_ENC_ERR_INVALID_PARAM)

So I have been using OBS for the last 4 years, no issues same PC. However over the last 6 months I have been getting issues at first I thought it was just because my PC is old and so the games I was trying to record were just too much. However 1st with The Lamplighters League and now with Dungeons of Hintersburg I keep getting this happen (see video) https://youtu.be/1u0kPTtJKAE

I have then had to force power off my PC and restart it, that was until today when I got lucky and was able to ctrl alt del out of the game returning my screen to normal and thats when I notice the recording error on steam. Now I have recorded 12 episodes of Dungeons of Hintersburg (average 90 min each before editing) with no issue however now the moment I get into a fight the issue happens. I have made no changes to any setting in game or OBS other than the updates so I am unsure what the issues are.
