How do weapons work?
From the demo I can see of course stats and such, but I also noticed that certain weapons seem to have letter rankings next to certain stats? What does that mean?

Do I get more stats when I level up if that's the weapon I'm holding? Do I get a buff to that stat? Do I get more stats if I choose to put bonus points into that with a letter rank?

That is weapons scaling, same system that the dark souls games use.

So, the letters mean that that weapon "scales" with that stat. This means that its attack power goes up as you have more of that particular stat. Upgrading the weapon will often upgrade that letter into one closer to the beginning of the alphabet, which will make it so that stat is more affective at increasing its attack power.

You don't have to worry about holding certain weapons as you level up.
Basically, it means that it adds bonus points to stats based on how much you’ve invested into them.

If I put a lot of points into strength, let’s say 100 for example, I’m going to try to use a weapon that has a good grade for strength.

If a weapon has an A grade, it might add an additional 10 points to my attack, but if it’s a B I only get 8. If it’s really low like D or E it might add 2-3.

Some people like to prioritize stats differently and it’s a good habit to get into making sure your weapon is going to benefit as much as possible with whatever you’ve been doing for your character build.

Thanks Null, I realized I sounded like a jerk in my first reply and jumped in to make a better comment. Looks like we found this thread at the same time.

Nah, not a jerk, that would probably be my first instinct to reply with as well before realizing that not everyone has played Dark Souls.

BTW I took a look at your profile and Double Dragon 2 is also part of my earliest memories. XD

Which doesn't really help people who don't know the souls games...

Which is why they immediately apologised and posted a more in-depth response.
