Extra Bourgeon Skin
Are these just extra collectibles after feeding the first one to the small bourgeon? The enemies that drop them are dotted around throughout the game but there seems to be no further use?

Yup, they don't serve any purpose after feeding the initial piece of skin.

That's a shame it would have been neat to feed the small bourgeon throughout the game and make him so massive he appears on the map or something.

He actually grows up if you return to his cave later in the game. You have an option to fight him or leave him alone.
There are several items like that in the game, like the wooden sword, with no apparent use. Maybe it was something they thought about using at some point and just never got around to. As for the skin though, maybe it's a situation where they wanted you to be able to get the skin from multiple locations without having to backtrack to a specific one. Dunno.

But, yeah, get ready for a lot of disappointment in picking up a lot of things that don't have apparent use or reason.

I believe this is part of the lore, in which "Gestrals and Nevrons have very special requests".
At least the old key was actually usefull.
