should i be trying to kill these mimes at the start?
ive died countless times trying to kill the one in town and one near the beginning of the actual expedition

im doing little damage to them and they one shot me pretty much if i dont dodge perfectly - which im struggling with on most enemies.

are these things supposed to be killed now or are they really meant for late game, ng+ or highly skilled players?

The one in Lumière can be killed during the prologue, but you have to break them first - then they take damage. And yeah, the damage they dish out is insane. Dodging is easier than parrying.

They have just two attacks, don't they? Easy to learn and never get hit again. I killed them as soon as I discovered them. Pretty sure their protection drops at some point as well, it's not infinite.

They need to be “broken” first as otherwise their defense stats are too high to do any meaningful damage.

Gustav has the best skill to break enemies in the game. You need to charge his arm to 10/10 and then do his overload skill. Most enemies will fill their yellow, break gauge under their health instantly. It will stun them for a moment and reduce defence to 0.

All mimes take way more damage after break. I killed all as I encountered them, they have only 2 attacks you have to learn. You can just dodge and break them, no need to parry
Yes they all have the same attack pattern, good to get used to it early on. They get pretty easy after fight them a couple of times. Since they use the same attacks. I eventually got used to the rhythm and they got real easy.
The mimes are meant to teach you the break mechanic. Did you skip all the tutorials? Literally, use Lumiere Assault then Overcharge once you're at 10./10 charges.

sophie just said help me gustav and the battle started.
mime cast some sort of shield effect and then pummeled me - no tutorials appeared at that point. or for any enemies concerning breaking mechanics

Don't worry, dude is just being a ♥♥♥♥, I figured out mimes, just because I am a Souls fan(masochist), and was ready to kill the bastard with that low damage. Just know they are meant to be killed as you encounter them, and Break is the trick to do it

i can go back and kill the one i missed near the start of the beginning expedition area (something meadows). im still very near there.
did i miss anything important by not killing the one in lumiere?

Yes, if you miss the very first one you can't get it later. Their hammer combo is annoying and hits like a truck but once broken they're weak af, so it's just a matter of reaching overcharge and breaking them before they kill you, which will require a couple of dodges or parries

the three slap attacks are easier to parry and counterattack
the hammer might have a rhythm variation
and as others said, break is a must
