IMO if you find this aspect annoying and / or difficult then there's a mod for that.
Alternatively, if you want to push through without using mods, then dodging is easier than parrying (5x, supposedly) AND if you get the timing just right then you'll get a "perfect dodge" notification which is using the same timing as parrying. I.e. you can learn patterns using dodges and learning to get "perfect dodges" and only then switch to parries.
However, there can be a night and day difference depending of builds and approach. Some players try to make a glass canon build at the start and make the game stupid hard.
Glass canon with 1hp works great at the very end but not early on. Act1 is all about VIT and DEF in my opinion.

I mean you can clutch a win if you literally never miss a parry and it will take like 40 minutes, but yeah.
Patience as you go through trial and error, lower difficulty to story or get a parry mod. As someone said, dodge can carry you throughout most of the game save a few instances where you HAVE to parry (if you can't attack first and one shot the boss, that is) due to boss specific mechanic
where do you get 5x easier from. Parry iframe is .15s and dodge is .22s
